辛香料草果的研究及精油应用进展

Progress on Research of Spice Amomum tsaoko and Application of Its Essential Oil

  • 摘要: 草果是一种药食同源的天然香料,被广泛应用于食品与医药行业。本文通过了解国内外关于草果中化学成分的研究,对草果中香气成分的提取方法、定性定量分析方法、已鉴定出的香气成分进行了归纳,阐明了目前草果香气成分研究中存在的问题,同时也总结了草果中难挥发性成分的研究现状以及草果在食品调味、抑菌防霉、抗氧化、抗肿瘤、防疫等领域的应用,旨在为草果的品种筛选、产地识别、深加工和综合利用提供参考。

     

    Abstract: As a natural flavor material, Amomum tsaoko (AT) is widely used in food and pharmaceutical industry. Based on the reports of the chemical compositions in AT published at home and abroad, the extraction methods, qualitative and quantitative analysis methods of volatile compounds and identified aroma components in AT are summarized. The problems existing in the research of aroma components are clarified. Meanwhile, the research status of non-volatile components in AT and the application in food seasoning, bacteriostasis and mildew prevention, oxidation resistance, anti-tumor and epidemic prevention are summed up briefly. The purpose of this paper is to provide references for variety screening, origin identification, deep processing and comprehensive utilization of AT.
