不同产区苦杏仁营养成分分析

Analysis of Nutritional Composition of Bitter Almond from Different Growing Areas

  • 摘要: 通过对不同产区苦杏仁营养成分进行测定,比较不同产区苦杏仁的营养和药用价值。结果表明:不同产区苦杏仁蛋白质含量为19.6%~25.7%,脂肪含量为40.0%~46.7%,总糖含量为3.2%~5.2%,粗纤维含量为9.1%~10.8%,苦杏仁苷含量为4.7%~5.0%;不同产区苦杏仁的必需氨基酸与总氨基酸比值为28.0%~28.9%,氨基酸比值系数分从大到小依次为:辽西朝阳和内蒙古赤峰产区苦杏仁、西北甘肃和宁夏产区苦杏仁、内蒙古呼伦贝尔产区苦杏仁;不同产区苦杏仁的不饱和脂肪酸与总脂肪酸的比值为93.849%~95.034%。综合分析认为,辽西朝阳和内蒙古赤峰产区苦杏仁的蛋白营养价值更高,西北甘肃和宁夏产区苦杏仁的脂肪酸营养价值更高,辽西朝阳和内蒙古赤峰产区苦杏仁的苦杏仁苷药用价值更高。

     

    Abstract: The nutritional and medicinal value of bitter almond from different growing areas was compared by analyzing their nutritional composition. The results showed that protein content was 19.6%~25.7%,fat content was 40.0%~46.7%,total sugar content was 3.2%~5.2%,crude fiber content was 9.1%~10.8% and amygdaline content was 4.7%~5.0% in bitter almond from different growing areas. The ratio of essential amino acids to total amino acids(EAA/TAA)in bitter almond from different growing areas ranged from 28.0% to 28.9%. The order of score of ratio coefficient of amino acid(SRC)in these growing areas from large to small was Chaoyang in western Liaoning and Chifeng in Inner Mongolia,Gansu and Ningxia in Northwest China,Hulunbeir in Inner Mongolia,respectively. The range of unsaturated fatty acid/total fatty acid(U/T)values of bitter almond from different growing areas were 93.849%~95.034%. All the results suggested that the protein nutritional value of the bitter almond from Chaoyang in western Liaoning and Chifeng in Inner Mongolia was the highest,the fatty acid nutritional value of the bitter almond from Gansu and Ningxia in Northwest China was the best and the amygdaline medicinal value of the bitter almond from Chaoyang in western Liaoning and Chifeng in Inner Mongolia was the greatest.
