皱纹盘鲍腹足及内脏抗氧化活性研究

Study on Antioxidant Activity of Gastropod and Viscera of Haliotis Discus Hanai

  • 摘要: 为推动皱纹盘鲍精深加工产业的发展,以皱纹盘鲍的腹足及内脏为原料,采用蛋白酶水解技术来制备腹足多肽酶解液(Peptides Hydrolysate of Gastropods,PHG)、内脏抗氧化肽酶解液(Peptides Hydrolysate of Viscera,PHV),并比较分析两种多肽酶解液的重金属含量、主要成分、体外抗氧化性、抑菌性。结果表明,PHG、PHV的重金属(As、Hg、Cr、Pb、Cd)含量均符合食品安全限量标准;PHG、PHV的主要成分中多肽含量最高,分别为81.17%、78.21%;PHG和PHV在不同的抗氧化性能上有差异,但二者总体的体外抗氧化活性较高,PHG的DPPH·的清除活性较PHV更高,其IC50值为3.11 mg/mL,PHV的O2-·清除率较PHG更高,其IC50值为4.92 mg/mL;PHG的抑菌圈直径为8.62 mm大于阳性对照8.06 mm、PHV抑菌圈直径11.61 mm大于阳性对照9.23 mm,说明PHG、PHV对大肠杆菌的生长均具有明显的抑制作用。以上结果说明皱纹盘鲍腹足、内脏酶解液具有食用安全性的保证,多肽含量高,且具有较高的抗氧化性及抑菌性,是做抗氧化肽等精深加工产品的优质原料。

     

    Abstract: In order to promote the development of wrinkles dish bao deep processing industry,the haliotis discus hanai gastropod and Viscera were used as raw material.Peptides Hydrolysate of Gastropods(PHG)and Peptides Hydrolysate of Viscera(PHV)were prepared by protease hydrolysis technology. The contents of heavy metals,main components,in vitro antioxidant activity and bacteriostasis of two kinds of polypeptide hydrolysates were compared and analyzed. The results showed that the contents of heavy metals(As,Hg,Cr,Pb,Cd)in PHG and PHV all met the food safety standard. The content of polypeptides in PHG and PHV were 81.17% and 78.21%,respectively. PHG and PHV had different antioxidant properties,but they had higher antioxidant activity in vitro. The DPPH· scavenging activity of PHG was higher than that of PHV,and its IC50 value was 3.11 mg/mL.The O2-· scavenging rate of PHV was higher than that of PHG,and its IC50 value was 4.92 mg/mL. The inhibitory zone diameter of PHG was 8.62 mm greater than that of the positive control 8.06 mm,and the inhibitory zone diameter of PHV was 11.61 mm which was greater than that of the positive control 9.23 mm,which indicated that PHG and PHV had significant inhibitory effects on the growth of Escherichia coli. The above results showed that the enzymatic hydrolysate of abalone platyrhizae and viscera had the guarantee of food safety,high polypeptide content,high antioxidant and bacteriostasis,and it was the high quality raw material for deep processing products such as antioxidant peptides.
