Abstract: Microwave processing is widely used in the field of food because of its rapid heating,simplicity and convenience. However,because it involves more parameters and needs many experiments in the optimization of food microwave processing,the introduction of mathematical simulation technology can make the optimization of conditions easier and more convenient. Mathematical simulation technology has been used to study the characteristics of microwave heating foods and is widely used in the development of microwave foods,microwave industrial equipment design,etc. The purpose of this paper is to describe the research status of numerical simulation in food microwave processing in recent years. Numerical simulation software for food microwave processing and it's calculation basis and calculation steps were reviewed.The method of authentication was summarized,and the deficiency of the method was pointed out.The applications of numerical simulation in food microwave such as microwave drying,sterilization,thawing and microwave assisted freezing was classified. In addition,the development and application prospect of numerical simulation in microwave food was also outlined.
