环境胁迫下食窦魏斯氏菌的耐受性评价

Tolerability of Weissella cibaria under Different Environmental Stresses

  • 摘要: 本研究以分离自新鲜竹笋表面的16株食窦魏斯氏菌(Weissella cibaria)为研究对象,评价其对低酸、温度和渗透压胁迫下的耐受力,筛选出具有良好耐受性的菌株,并对所得良好耐受性的菌株进行体外人工胃液和胆盐耐受力评价。结果表明,低酸、温度、渗透压胁迫下实验菌株的耐受力各不相同,综合比较得出5株食窦魏斯氏菌的耐受力均较好,分别是HSG 08、HSG 09、HSG 10、HSG 11和HSG 15。pH3.0人工胃液实验结果表明,5株食窦魏斯氏菌中,HSG 08、HSG 09和HSG 11对人工胃液中的存活率均较高,其中HSG 08的存活率最大;胆盐胁迫实验结果表明,在0.1%胆盐时,HSG 08的生长效率最高。综上所述,HSG 08在不同环境胁迫下的耐受性均较好,可用于下一步益生性食窦魏斯氏菌的研究。

     

    Abstract: Based on 16 strains of Weissella cibaria which were isolated from the surface of fresh bamboo shoots,their tolerability under low acid,temperature and osmotic stress were evaluated. Then the selected strains with good tolerability were revaluated by experiments of simulated gastric fluid and bile salt. The results showed that,low acid,temperature and osmotic stress showed different strains had different tolerability,and HSG 08,HSG 09,HSG 10,HSG 11 and HSG 15 had better tolerability. In addition,the tolerability of the five strains to pH3.0 simulated gastric fluid showed that HSG 08,HSG 09 and HSG 11 had a higher survival rate,and the survival rate of HSG 08 was the highest. Furthermore,the tolerability of the five strains to bile salt showed that the growth efficiency of HSG 08 was also the greatest after 0.1% bile salt treatment. In conclusion,the tolerability of HSG 08 under different environmental stresses was well,which could be used for the further research of the probiotic features of Weissella cibaria.
