响应面法优化青钱柳速溶茶的酶解工艺条件

Optimization of enzymolysis conditions of the instant tea of Cyclocarya paliurus (Batal.) Iljinskaja by response surface

  • 摘要: 以青钱柳降糖活性成分黄酮和多糖含量为主,辅以浸膏得率为指标,采用综合评分法进行数据分析,通过响应面实验优化青钱柳速溶茶的酶解工艺。结果表明,经过优化后的工艺条件为:纤维素酶浓度为0.84%、酶解温度49℃、酶解时间29 min、液料比为22∶1(mL/g),其黄酮和多糖含量分别为15.14、11.88 mg/g,浸膏得率为23.03%,综合评分为99.99。 

     

    Abstract: Taking the contents of flavonoids and polysaccharides, including the extract yield and comprehensive score as standard, the data were analyzed by comprehensive evaluation method, using the response surface to optimize the enzymolysis conditions of the instant tea of Cyclocarya paliurus.The results showed that the optimum conditions were established as follows:using 0.840% cellulose as hydrolysis solvent, enzymolysis temperature 49 ℃, enzymolysis 29 minutes with liquid-to-solid ratio22 ∶ 1 ( mL/g) , the content of flavonoids was 15.14 mg/g, the content of polysaccharides was 11.88 mg/g, the extracts yield was 23.03%, and comprehensive score was 99.99.
