稻谷老化机制研究进展

Research progress in aging mechanism of rice

  • 摘要: 稻米老化是一个复杂的过程。虽然淀粉、细胞壁残留物、蛋白质和脂质的总含量没有显著变化,但老化过程却引起了许多化学基团组分的改变以及大分子之间的相互作用。本文主要综述了稻米在储藏过程中的品质变化及机制,展望了我国稻米储藏研究的未来发展方向,为我国稻谷的安全储藏提供参考。 

     

    Abstract: Rice aging is a complex process.Although the total contents of starches, cell wall residues, proteins and lipids were not changed significantly, the aging process had caused the change of many chemical group components and the interaction between macro-molecules.This paper mainly reviews the quality change and mechanism during the storage process of rice, and prospects the future development of rice storage in China to provide a reference for the safe storage of rice in China.
