富硒食用油的研发现状及展望

Current states of the research and development of selenium-riched edible oil

  • 摘要: 硒是人体必需的微量元素,缺硒或硒过量都可导致人类机体一系列疾病。因此,富硒食用油的研究引起了学者们的广泛关注。为梳理富硒食用油的研发现状和预测未来发展方向,本文综述了富硒油的富硒方法、研究现状及存在的问题,同时着重介绍了国内外富硒标准的制定,最后预测了富硒食用油未来发展方向,主要包括寻求兼备天然抗氧化及补硒功能的富硒大蒜和富硒藻类提取物添加生产富硒食用油,开发富硒固态凝胶油等。 

     

    Abstract: Selenium is an essential trace element of human-being.Selenium deficiency can lead to a series of human disease.Therefore, researches of Se-rich edible oil cause extensively attention in China. In order to sort out the research and development status of Se-rich oil product, and to predict the development of Se-rich oil in the future, this paper summarized the selenium-enriched method, the research status and the existing problems in Se-rich oil manufacturing. At the same time, the domestic and overseas selenium-enriched standard was introduced. Finally, the development trend of selenium-enriched edible oil in the future was predicted: adapting selenium-rich garlic essential oil as natural antioxidant additive maybe a very interesting way, some of the selenium-rich algae hydrolysates may be a satisfactory gellant alternative for selenium-rich gel oil production.
