“1-甲基环丙烯+蓄冷剂+保温包装”模拟运输蓝莓鲜果研究

The effect of “1-MCP treatment + cold storage agent + insulation package” to simulated transportation of the fresh blueberry

  • 摘要: 为研究"1-甲基环丙烯(1-MCP)+蓄冷剂+保温包装"模式模拟运输蓝莓鲜果效果,以蓝莓(粉蓝)鲜果为对象,经1-MCP(1.0μL/L、(26±2)℃)熏蒸4 h、预冷12 h后装入泡沫箱,并加入蓄冷剂,35℃外环境下以100 km/h的速度模拟振荡,分别于24、48 h后开箱,并取出果实放入PE保鲜袋,4℃下进行192 h货架期实验,每隔48 h进行各项指标检测。结果表明,模拟运输期放入相同重量蓄冷剂条件下,模拟运输24 h,使用1-MCP处理组在货架末期的腐烂率(MP24)分别比模拟运输48 h对照组(CK48)、模拟运输24 h对照组(CK24)、模拟运输48 h 1-MCP处理组(MP48)低18.99%、14.03%和14.11%,硬度分别比CK48、MP48、CK24高14.20%、9.93%和4.67%,能维持果胶酶活性最低,并保持花色苷、总酚、VC、GSH含量。因此,"1-MCP处理+蓄冷剂+保温包装"短期运输,是一种低成本、高效的蓝莓鲜果物流模式。 

     

    Abstract: In order to investigate the“1-methylcyclopropene ( 1-MCP) treatment, cold storage agent and insulation package”model to the effect of fresh blueberry by simulated transportation, the fresh blueberry ( Powderblue) was taken as the research object.And the process was carried out as follows: fumigated by the 1-MCP ( 1.0 μL/L, ( 26 ± 2) ℃) for 4 h, then loaded in a foam box after twelve-hour pre-cooling while being added in some cold storage agent, after that, vibrate simulation was carried out in 35 ℃ of external environment condition at the speed of 100 km/h, after 24 h or 48 h, the box was opened and the product was placed into a Micro-porous Films. Finally the shelf experiment was carried out under 4 ℃ of outer condition for196 h, and each indicator was examined every 48 h. The results showed that the simulated transportation period placed in the cold storage agent under the condition of the same weight, on the final stage of shelf experiment, the decay rate of 1-MCP treatment group in simulated transportation for 24 h ( MP24) was 18.99%, 14.03% and 14.11%, lower than that of the control group in simulated transportation for 48 h ( CK48) , control group simulated transportation for 24 h ( CK24) , and 1-MCP treatment group in simulated transportation for 48 h ( MP48) , respectively, while the firmness of MP24 was 14.20%, 9.93% and 4.67% higher than that of CK48, MP48 and CK24, respectively.Likewise, that could also keep the lowest activities of pectinase, and maintain the content of anthocyanins, total phenol, Vc, GSH.So, it was a kind of low cost, high efficiency of fresh blueberry logistics model which was the “1-MCP treatment, cold storage agent and insulation package”and short-term transportation.
