微生物油脂结构分析及安全性的研究进展

Research progress on the structure and security of the microbial oil

  • 摘要: 通过国内外对微生物菌种的安全性分析以及微生物油脂的安全性评价,并对微生物油脂的脂肪酸组成与甘三酯结构进行研究,以及对微生物油脂氧化动力学、结晶动力学等物性的分析比较,提出微生物油脂结构与安全性的关联性,并对目前微生物油脂的应用进行了简单的介绍。分析微生物油脂的安全性与油脂结构之间的关系对微生物油脂在食品行业方面的应用具有重要意义。 

     

    Abstract: Microbial safety analysis and microbial oil safety evaluation,the fatty acid composition and triglyceride structure of microbial oils,the physical property of microbial lipid contain oxidation kinetics and crystallization kinetics were analyzed through the domestic and abroad.Compared the relevance of microbiological lipid structure and safety is necessary.Then the research of microbial oils on the current status were introduced.The relationship between the safety of microbial oil and the structure of the grease is important for the application of microbial oil in food industry.
