乳酸菌中乳酸脱氢酶的研究进展

The research progress of the lactate dehydrogenases in lactic acid bacteria

  • 摘要: 乳酸脱氢酶(Lactate dehydrogenases,LDHs)是乳酸菌利用碳源转化丙酮酸为乳酸的关键酶。本文从乳酸脱氢酶的分类、结构与功能、合成乳酸的微生物属别及代谢途径等方面,综述了乳酸菌中乳酸脱氢酶的研究进展,以期为微生物合成乳酸的代谢调控提供一定的理论指导。 

     

    Abstract: The lactate dehydrogenase was a key enzyme which converts pyruvic acid to lactic acid in lactic acid bacteria. In this paper,the research progresses of the classification,structures and functions of the lactate dehydrogenases,as well as the microbial genuses and synthetic metabolic pathway of the lactic acid production were summarized. This review will assist in understanding the metabolic regulation of lactic acid synthesis in many different species and genera,hoping for theoretical guidance for others.
