γ-射线降解玉米粉中玉米赤霉烯酮的效果及降解动力学研究

Study on the efficiency and kinetics of γ-ray irradiation degradation of zearalenone in corn

  • 摘要: 采用γ-射线降解玉米粉中玉米赤霉烯酮(ZEA),建立玉米粉中ZEA残留分析方法,研究辐射剂量、毒素起始浓度、水分含量等因素对ZEA降解率和降解动力学参数的影响,并分析辐射过程中玉米营养成分的变化。结果表明,随γ-射线辐射剂量增大,ZEA降解率显著增加(p<0.05),50 k Gy时玉米粉中3601950μg/kg ZEA降解率为33.85%43.28%;γ-射线对ZEA的降解作用符合一级反应动力学方程,起始毒素浓度对ZEA的降解率没有显著影响(p>0.05),低浓度玉米粉中ZEA的降解速率大于高浓度。玉米粉水分含量为9.41%12.35%时对ZEA降解率和降解速率均没有显著影响(p>0.05)。50 k Gy辐射剂量对玉米粉蛋白质、脂肪、淀粉含量没有显著影响(p>0.05),但赖氨酸含量降低8.11%。结论:γ-射线对ZEA具有降解作用,可采用一级反应动力学方程预测降解速率。 

     

    Abstract: The effects of radiation dose,zearalenone initial concentration,moisture content on the degradation rate and degradation rate constant of zearalenone( ZEA) in corn flour by γ- ray irradiation,the stability of corn nutrients at different radiation doses and establishment of ZEA residual method in maize flour were studied in this paper.The results indicated that the ZEA degradation rate was increased with elevated radiation dose. When corn flour was360~1950 μg / kg and zearalenone degradation rate was 33.85% ~ 43.28% at 50 k Gy,γ- ray degradation of ZEA obeyed the first order kinetics,the degradation rate of ZEA was not significantly affected by the initial concentration of the toxin( p > 0.05),but the degradation rate of the low initial concentration ZEA in maize flour was higher than that of high concentration.The degradation of ZEA were not significantly affected by the content of 9.41% ~12.35%in the corn flour( p > 0.05). 50 k Gy radiation dose had no significant effect on the corn flour protein,fat,starch content,but the lysine content was decreased by 8.11%. In conclusion,γ- ray had a degradation effect on ZEA,which can be used to predict the degradation rate of the first order reaction kinetics equation.
