采用不同蛋白酶制备羊胎盘抗氧化肽的研究

Study on producting antioxidant peptide from goat placenta by different proteases

  • 摘要: 选取羊胎盘为实验材料,以水解度、多肽含量和DPPH自由基清除率为考察指标,采用生物酶法对羊胎盘酶解制备抗氧化肽进行了研究。采用8种蛋白酶,在最优的酶解条件下对羊胎盘进行酶解制备抗氧化活性肽。结果表明,风味蛋白酶、碱性蛋白酶和中性蛋白酶酶解产物对DPPH清除的IC50分别为0.6420、0.7120和0.6781mg/m L。说明该三种酶对羊胎盘酶解制备抗氧化肽的效果比较好。 

     

    Abstract: Study on production antioxidant peptides from goat placenta by proteases on hydrolysis of degree,peptide yield and a evaluation of scavenging rate of DPPH radical.Hydrolysis by eight proteases which under their optimal conditions.The results showed that the scavenging rate of DPPH radical of Flavourzyme,Alkaline and Neutrase were 0.6420、0.7120 mg / m L and 0.6781 mg / m L respectively. Flavourzyme,Alkaline and Neutrase were the best enzyme to product antioxidant peptide from goat placenta.
