现代高新技术在水产品加工中的应用

Research progress in application of high technology in aquatic products

  • 摘要: 水产品是一种大众性消费品。当前,高新技术已不断应用于提高水产品资源利用率、优化渔业产业结构。为促进高新技术在水产品加工中产业化的应用,本文综述了超高压、辐照、酶技术、超微粉碎、液熏、超临萃取和膜分离等新技术在水产品加工中的应用现状及研究进展,以期为水产品加工业的发展提供参考价值。 

     

    Abstract: Aquatic products are popular in daily foods. High technology has been used to optimize the fisheries industry structure and improve utilization rate of aquatic products. Application high technology, such as ultrahigh-pressure, irradiation, enzyme technology, microwave, ultra micro-shatter, artificial smoking, membrane separation were reviewed systematically in order to promote the industrial application of high technology in aquatic product processing industry and provide reference value on developing aquatic products processing.
