洪泽湖野生河蚬营养成分的分析与评价

Analysis and evaluation on the nutritional components of wild Corbicula Fluminea from Hongze lake

  • 摘要: 为全面科学地开发利用河蚬资源,对洪泽湖野生河蚬的营养成分(水分、蛋白质、粗脂肪、灰分、氨基酸和脂肪酸)进行了测定。结果表明,洪泽湖野生河蚬的水分含量为87.27%,干样中灰分含量为7.57%,蛋白质含量为66.61%,粗脂肪为11.67%,DHA和EPA的总量为16.78%,必需氨基酸含量164.9mg/g,占总氨基酸的39.6%。 

     

    Abstract: In order to make the use of corbicula fluminea resource comprehensively and scientifically, the nutrients ( moisture, protein, crude fat, ash, amino acids and fatty acids) of wild corbicula fluminea in Hongze lake were determined.The results showed that the water content of corbicula fluminea in Hongze Lake was 87.27%, ash content was 7.57%, protein content was 66.61%, crude fat was 11.67%, the total amount of DHA and EPA was16.78%, essential amino acid content was 164.9mg /g, which occupied 39.6% in total amino acid.
