脉冲强光对糙米发芽过程中内源酶活性的影响

Effect of pulsed light treatment on the endogenous enzyme activity of germinated brown rice

  • 摘要: 研究了脉冲强光(IPL)不同单次能量、闪照次数、开始处理时间对糙米发芽过程中α-淀粉酶、蛋白酶及谷氨酸脱羧酶(GAD)的影响。结果表明,糙米浸泡后,在单次闪照能量400J,闪照次数300次,发芽25h时,α-淀粉酶活力达到12.38mg(g·min)-1、蛋白酶活力达到102.36mg(g·min)-1、谷氨酸脱羧酶(GAD)活力达到10.83mg(g·min)-1最高值分别为无处理组的2.87、1.30、2.16倍;高强度的脉冲强光处理,会抑制发芽糙米内源酶活性。糙米浸泡后进行适宜的脉冲强光处理,可以提高其内源酶的活性。 

     

    Abstract: The effects of pulsed light through different single energy, flash time and treatment start time on the activity of alpha-amylase, protease, and glutamic acid decarboxylase (GAD) during the brown rice germination was studied. The results showed that brown rice after soaking, single energy of 400J, flash time of 300, the germination of 25h, α-amylase activity reached 12.38mg (g·min) -1, protease activity reached 102.36mg (g·min) -1, glutamic acid decarboxylase (GAD) activity reached 10.83mg (g·min) -1, the maximum value were 2.87, 1.30, 2.16 times higher than non-treated group. High-intensity pulsed light treatment can inhibit endogenous enzyme activity of germinated brown rice. Suitable pulsed light for processing brown rice after soaking them can improve the endogenous enzyme activity.
