孜然特征性成分、功能性营养成分分析及生物活性的研究进展

Research progress in characteristic ingredients, functional nutrients and biological activities of cumin

  • 摘要: 孜然,又称孜然芹、安息孜然、安息茴香等,为伞形科孜然芹属一年或两年生草本植物。孜然富含精油这一特征性成分以及蛋白质、多酚类物质、膳食纤维等多种功能性营养成分,具有理气开胃、祛寒除湿、抗过敏、抗氧化、杀菌抑菌、抗癌、抗血小板聚集和抗糖尿病等保健功效,在食品及医药领域具有十分重要的应用。本文分别从孜然的特征性成分(精油)、功能性营养成分(如蛋白、多酚、黄酮、膳食纤维等)以及生物活性(如抗氧化活性、抑菌活性、抗癌活性、降血糖活性等)方面综述了国内外关于孜然的研究进展,旨在为孜然的开发利用提供理论依据。 

     

    Abstract: Cuminum cyminum L., commonly known as cumin, belongs to the cumin genera of apiacea family.It is an herbaceous annual or biennial plant.Cumin is rich sources of characteristic ingredients (essential oil) and some functional nutrients, for example, proteins, polyphenols, dietary fiber, it has been actively researched for its biological activities, such as qi appetizer, dispel cold dehumidification, antiallergic, antioxidant, antimicrobial, anticarcinogetic, antiplateleaggregation, antidiabetic and so on.It plays an important role in the field of food and medicine.The research progressed on cumin from several aspects were summarized, including characteristic ingredients (essential oil) , functional nutrients (proteins, polyphenols, flavonoids, dietary fiber) and biological activities (antioxidant, antimicrobial, anticarcinogenic, antidiabetic) , it aimed to provide a theoretical basis on the utilization of cumin.
