  • 摘要: 酱油渣是酱油生产过程中产生的废弃物。本文对酱油渣的综合利用现状做了简要的概括,如将其用作饲料、肥料,或从中提取膳食纤维、油脂、大豆异丙酮等功能性成分,为今后更好地利用酱油渣提供参考。 

     

    Abstract: Soy sauce residue is the by-product in the process of soy sauce production. The current situation of comprehensive utilization of soy sauce residue was summarized in this paper, such as its use for feed, fertilizer, or extraction of functional components like dietary fiber, grease and soybean isoflavone. This could be a reference for better use of soy sauce residue in the future.
