Research progress of phytic acid and its bioactivities

  • 摘要: 植酸是一种天然含磷有机化合物,普遍存在于植物种子和果蔬中,具有多种重要生理活性,可被开发为多功能的绿色食品添加剂。本文对近年来关于植酸抗氧化、抗肿瘤、防治心脑血管疾病、促进发酵等方面功效的研究进展进行了综述。
