γ辐照对茯砖茶品质的影响研究

Study on effect of γ irradiation on quality of Fuzhuan brick-tea

  • 摘要: 用不同剂量的γ辐照对茯砖茶进行处理后考察其微生物数量、理化性质及感官品质的变化。结果表明,γ辐照对茯砖茶中的微生物有较好的杀灭效果,4kGy的辐照处理能杀灭茯砖茶中97%以上的霉菌。辐照过的茯砖茶可浸出氟和氨基酸含量变化不大,可溶性糖含量和水浸出物含量提高,茶多酚、氨基酸、咖啡碱含量降低,总体感官品质有所改善。 

     

    Abstract: Fuzhuan brick-tea was treated with γ irradiation, followed by microbio and physicochemical property detection.The results of microbiological detection showed that 4kGy γ irradiation could kill 90% of mould.The analysis of physicochemical property showed that irradiation did not affect the release of fluoride, whereas decreased the content of polyphenols, amino acids, caffeine and increased the content water-soluble sugars and water extraction.In general, the irradiation improved sensory quality of brick-tea.
