食品中微量硒测定方法研究进展

Research progress in determination of trace selenium in food

  • 摘要: 硒具有延缓衰老、增强免疫力、预防癌症等功效。人体获取硒的主要来源是食品,本文从光学分析法、电化学分析法、色谱学分析法、联用技术等方面对食品中硒含量检测方法进行了综述。并同时介绍了近年来常用于硒检测的联用技术,以期为食品中硒含量测定方法研究提供参考。 

     

    Abstract: Selenium plays an important role in protecting the health of body.It can slow the aging process, enhance immunity, and prevent cancer and so on.We obtain selenium mainly from food.In this paper, the commonly used technologies for the determination of selenium in food were reviewed briefly.It mainly contained about optical analysis methods, electrochemical analysis methods, chromatographic analysis methods, combination technique, and other methods.Meanwhile, combination technique used in selenium speciation analysis was also reviewed, which was wished for providing reference for the study on determination of trace selenium in food.
