日粮中Zn和Se强化对秦宝雪花牛肝中矿物质及挥发性化合物的影响

Effect of Zn and Se enhancement in diet on mineral composition and volatiles of beef liver of Xuehua cattle

  • 摘要: 为了研究日粮中Zn、Se营养强化对秦宝雪花牛(秦川牛×日本和牛)肝矿物质及挥发性化合物的影响,选取16头秦宝雪花公牛为实验对象,分别以基础日粮、添加Zn、Se营养强化剂的强化日粮进行饲养。在18月龄屠宰后测定其肝脏中的矿物质元素Ca、Fe、Zn、Se、Mg以及挥发性化合物。结果发现Zn、Se强化使秦宝雪花牛肝矿物质元素中的Zn含量提高了73%,并使Se含量提高了18.6倍。苯并噻唑的含量在Zn、Se强化后被提高了15%。此外,Zn、Se强化还会影响到壬醛、反-2-壬烯醛、2-戊基呋喃等物质的含量。结果表明,日粮中Zn、Se强化会提高秦宝雪花牛肝中Zn、Se等矿物质含量,同时会对部分含硫化合物和醛类物质产生明显影响。 

     

    Abstract: In order to investigate the effect of enhancement of Zn and Se in diet on the minerals and volatile compounds of beef liver of Xuehua cattle (Qinchuan cattle×Japanese black cattle) , sixteen Xuehua cattles were selected as objects of study, which were raised by basal diet and diet enhanced with Zn and Se.The minerals and volatile compounds of beef liver of Xuehua cattle were determinated after slaughter.It was found that the content of Zn and Se were increased by 73%and 18.6 folds through enhancement.The content of benzothiazole was increased by 15%.Moreover, enhancement of Zn and Se in diet had significant effect on content of nonanal, E-2-nonenal and 2-pentylfuran.The results showed that enhancement of Zn and Se in diet could increase the content of Zn and Se in beef liver of Xuehua cattle, while the relative content of sulfur-containing and aldehydes volatile compounds were affected significantly.
