鲜切果蔬苯丙烷代谢的研究进展

Advances on benzene propane metabolism of fresh-cut fruits and vegetables

  • 摘要: 新鲜果蔬经切割处理后,生理代谢发生紊乱,产品品质大大降低。同时,果蔬机体产生积极的应对反应,通过诱导苯丙烷代谢途径中防御酶活性的提高和多酚、黄酮、木质素等的积累,对机械胁迫起到防御作用。本文通过综述切割后果蔬苯丙烷代谢关键酶以及主要中间产物和最终产物的变化,讨论切割对果蔬苯丙烷代谢的促进作用。 

     

    Abstract: Cutting makes quality of fresh fruits and vegetables get slower rapidly because the physiological metabolism is disordered.Simultaneously, body of fruits and vegetables' makes positive response and defenses the mechanical stress by inducing the risen of relative enzyme activity of benzene propane metabolic pathways and the accumulation of secondary metabolite including polyphenol, flavone and lignin.This paper was intended to summarize the key enzymes change of metabolism and important secondary metabolites.Then the positive influence of cutting on fruits and vegetables' benzene propane metabolism was discussed.
