Abstract
In order to prolong the shelf life of fresh leaves of Perilla frutescens and ensure the storage quality of leaves during storage and retail, a newly developed coating fresh-keeping paper bag was used to package the leaves of Perilla frutescens in this study. The composite coating solution used in the experiment was prepared by dissolving chitosan, sodium D-isoascorbate, tea polyphenols and calcium chloride in acetic acid aqueous solution in a certain ratio. The effects of different component concentrations in the composite coating solution of fresh-keeping paper bags on the sensory quality, VC content and weight loss rate of Perilla frutescens were investigated by single factor and orthogonal experiments, and the optimal component concentration ratio of the composite coating solution was determined as follows: Chitosan concentration 2.0%, sodium D-isoascorbate concentration 2.4%, tea polyphenols concentration 0.25%, and calcium chloride concentration 0.6%. The physical, chemical and antibacterial properties analysis showed that when the coating amount was 30 g/m2, the composite coating solution had formed uniform coating on the surface of the paper. At this time, the coated paper had strong antibacterial ability, and the coating penetrated into the fiber gap of paper, so that the weight, thickness, elongation and moisture content of paper were improved, the water vapor permeability decreased, and the tensile strength and wettability decreased slightly, which met the packaging requirements of Perilla frutescens leaves and would have broad prospects for development in the field of fruit and vegetable packaging.
