Research progress in the comprehensive utilization of soy sauce residue

  • Soy sauce residue is the by-product in the process of soy sauce production. The current situation of comprehensive utilization of soy sauce residue was summarized in this paper, such as its use for feed, fertilizer, or extraction of functional components like dietary fiber, grease and soybean isoflavone. This could be a reference for better use of soy sauce residue in the future.
