Technological conditions optimization of GABA enrichment of brown rice germination using nutrient water culture method

  • The enrichment of GABA during brown rice germination process was promoted by using nutrient water culture method. Meanwhile, the technological conditions were optimized by using response surface methodology (RSM) :the germination temperature was 30.7℃, the germination time was 24.8h, nutrient solution pH was 5.68 and MSG concentration was 2.09mg/mL. Under optimum conditions, the GABA content in germinated brown rice can be reached to 210.8mg/100g.
