摘要: 随着健康产业的发展,卵磷脂因其护肝降脂等保健功能逐渐被消费者熟知。国内外研究证实卵磷脂在食药行业以及工业生产中发挥积极作用,根据卵磷脂生产中条件和要求的不同选用适合的分离提纯和检测方法。本文通过对卵磷脂的来源、分离提纯技术操作条件的选择、分析鉴定方法的优缺点以及卵磷脂的应用现状展开综述,根据不同的提取鉴定要求,采用相应的工艺参数。旨在对卵磷脂开发与综合利用提供思路,在食品、医药等各个领域充分发挥作用,对卵磷脂产业的发展具有重要意义。Abstract: With the development of health industry,lecithin is gradually known to consumers because of its health care functions such as protecting liver and lowering fat. Studies have confirmed that lecithin plays an active role in food industry,medicine industry and industrial production. In this paper,the source of lecithin,the selection of operating condition of separation and purification,the advantages and disadvantages of identification methods,and the application status of lecithin are reviewed. According to the different requirements of extraction and identification,the corresponding process parameters are adopted. The aims are to provide ideas for the development and comprehensive utilization of lecithin,and to play a full role in food and medicine,which is of great significance to the development of lecithin industry.
