Effects of Two Kinds of Modified Atmosphere Preservation Methods on Storage Quality and Physiological and Biochemical Properties of Lentinus edodes

摘要: 为了考察不同气调方式对鲜香菇的保鲜效果,采用聚乙烯(PE)膜自发气调包装和高CO2控制气调保鲜香菇,以不做任何保鲜处理的香菇为对照,于4±1℃下贮藏20 d,测定香菇的蛋白质、还原糖、抗坏血酸(AsA)、总酚、类黄酮和丙二醛(MDA)的含量,以及过氧化物酶(POD)、多酚氧化酶(PPO)和苯丙氨酸解氨酶(PAL)等褐变相关酶活性的变化。结果表明:两种气调方式保鲜香菇的各项指标均优于对照;较于高CO2控制气调保鲜,PE膜自发气调包装能更好的抑制褐变相关酶POD、PPO和PAL的活性,降低MDA水平,减少蛋白质、还原糖、AsA等营养成分损失,维持较高的总酚和类黄酮含量,延缓细胞衰老进程,进而提高香菇的感官评分,因此,PE膜自发气调包装是一种较好的香菇贮藏保鲜方法。Abstract: In order to explore the effects of different modified atmosphere preservation methods on the fresh-keeping of Lentinus edodes,Lentinus edodes were persevered with polyethylene(PE)modified atmosphere package and high CO2 controlled atmosphere and stored at 4±1 ℃ for 20 d. Lentinus edodes without any treatment as control. Changes of protein,reducing sugar,ascorbic acid,total phenol,flavonoid,malondialdehyde and the activity of browning related enzyme such as peroxidase(POD),polyphenol oxidase(PPO)and phenylalanine ammonia lyase(PAL)in the mushroom tissue were measured. The results showed that the indicators of the Lentinus edodes treated with two kinds of modified atmosphere preservation methods were significantly better than the control. PE modified atmosphere package treatment could significantly inhibit the activities of POD,PPO and PAL,reduce the level of MDA,the nutrition loss of protein,reducing sugar and ASA,maintain high content of total phenols and flavonoids. And then,the process of cell aging was delayed. Furthermore,the sensory score of Lentinus edodes was improved. Therefore,PE modified atmosphere package could be a better method for Lentinus edodes storage and preservation than the high CO2 controlled atmosphere.
