Abstract:
In this study,the ultrasound and spray humidification treatment were applied to pretreat the black brown rice,
γ-aminobutyric acid(GABA)contents and polyphenols contents in germinated brown rice from black brown rice were used as evaluation index,an response surface methodology involving three independent variables at three different levels based on single factor experiments were used to determine optimal the processing technological parameter of ultrasonic-assisted spray humidification for enriching bioactive substances in germinated black brown rice. Results showed that,the optimum conditions were determined as follows:Ultrasonic power 144 W,ultrasonic temperature 40℃,ultrasonic time 45 min,the amount of single-pass cycle spray humidification 10 mL,interval time 5 min. Under these conditions,
γ-aminobutyric acid(GABA)contents from germinated black brown rice was 83.71 mg/100 g,the yield of polyphenols from germinated black brown rice was 419.55 mg/100 g.In conclusion,the response surface model in this study had higher accuracy. The optimized process conditions obtained have certain feasibility,which an provide reference for enriching bioactive substances in germinated black brown rice,and have broad application prospects.
