Abstract:
In this study, crude protein, amino acid, crude fat, mineral and triterpenes contents of the Ganoderma applanatum fruiting bodies were measured.Simultaneously, the compositions of amino acid, fatty acid and mineral were analyzed.Afterwards, the antioxidant activity of total polysaccharides and triterpenoids from Ganoderma applanatum were investigated through determining the clearance rate of DPPH· and HO·.The results showed that the total sugar content of Ganoderma applanatum was 43.8%, and the contents of triterpene, protein, crude fat, ash, vitamin C and vitamin A were 1.75%, 11.4%, 0.40%, 1.80%, 10.5% and 15.6% respectively.It also contained abundant mineral elements such as Ca, Fe, Zn and so on, the contents were 5740, 29.7, 15.6 mg/kg respectively. Moreover, the fruiting bodies of Ganoderma applanatum, which contained methionine ( 19.3 g/kg) , aspartic acid ( 5.5 g/kg) , valine ( 19.4 g/kg) , leucine ( 4.2 g/kg) , linoleic acid ( 340.9 mg/kg) and others, are a nutrient-rich and unique flavor of medicinal bacteria. By measuring the clearance rate of DPPH· and HO·, it was found that triterpenes and polysaccharides had some antioxidant activity, and the antioxidant capacity of triterpenoids was stronger than that of polysaccharides.
