Study on the antioxidant ability of four varieties of Northern highbush blueberry extracts

摘要: 以四个北高丛蓝莓品种的甲醇提取物为研究对象,分别用紫外分光光度计测定总糖、总酚、花青素及黄酮的含量,并利用体外法研究了四种蓝莓提取物对DPPH自由基的清除作用。结果表明,同一时期同一地点采摘的蓝莓,总糖、总酚、花青素以及黄酮含量最高的是爱国者,它们的值分别为9.77%,1.91mg/g,0.668mg/g,0.22mg/g,其次为北青,含量最低的为尼尔森(除花青素外)。四个品种的蓝莓甲醇提取物对DPPH自由基均具有不同程度的清除作用,爱国者和北青的DPPH自由基清除能力较强,能够达到30%以上,这与其中所含的总酚、花青素的含量呈正相关。Abstract: The total sugar content, total phenolic content, total anthocyanins content and total flavonoids content of four kinds of highbush blueberries methanol extracts were determined through UV-spectrophotometer method. The scavenging DPPH free radical ability of four kinds of blueberries extracts were investigated by in vitro assay. The results demonstrated that Pariot had the highest contents of sugar, phenolics, anthocyanins and flavonoids among the four blueberry cultivars collected at the same time and place, and the value was 9.77%, 1.91mg/g, 0.668mg/g and 0.22mg/g respectively. Nelson had the lowest contents of sugar, phenolics, anthocyanins and flavonoids. The four kinds of methanol extracts of blueberries showed different scavenging abilities against DPPH free radicals. Paroit and Northblue had better DPPH free radical scavenging ability, the value could reach above 30% and the positive correlation among the antioxidant capacity and the content of phenolics, anthocyanins were observed.
