气相色谱法分析中华绒螯蟹4个部位中总脂肪酸和游离脂肪酸含量与组成

Analysis of total and free fatty acids contents and compositions of four different parts in Chinese mitten crab ( Eriocheir sinensis) by gas chromatography

  • 摘要: 通过气相色谱法对雄性和雌性中华绒螯蟹4个部位中总脂肪酸和游离脂肪酸含量与组成进行研究。结果表明:雌蟹的腹肉和钳肉及蟹膏中的总脂肪酸种类最多,蟹黄/膏中的总脂肪酸含量高于肌肉中的含量。从总脂肪酸组成看,在SFA中,棕榈酸(C16∶0)、十七烷酸(C17∶0)、硬脂酸(C18∶0)和二十三酸(C23∶0)占主导地位;在MUFA中油酸(C18∶1n9c)、棕榈油酸(C16∶1n7)、顺-11-二十烯酸(C20∶1n9)和芥酸(C22∶1n9)的百分组成较高;在PUFA中,亚油酸(C18∶2n6)、C20∶5n3(EPA)和二十二碳六烯酸(C22∶6ns)百分组成较高。在中华绒螯蟹游离脂肪酸中,百分组成较高的游离SFA有C17∶0、C15∶0和C18∶0,MUFA有C22∶1n9和C18∶1n9c,PUFA有C18∶2n6c、C20∶5n3和C22∶6ns。另外,通过对总脂肪酸和游离脂肪酸组成的聚类分析结果可知,肌肉中的总脂肪酸和游离脂肪酸组成都较为相似;蟹黄和蟹膏中的总脂肪酸组成相似,但游离脂肪酸组成却不同。 

     

    Abstract: The total and free fatty acid compositions and contents of four different parts in male and female Chinese mitten crab were analyzed by gas chromatography ( GC) .The results showed that: in total fatty acids, there were more kinds of total fatty acids in female abdominal meat and claw meat and crab paste.The contents of total fatty acids in crab spawn and crab paste were higher than crab meat.The percentage compositions of C16∶0, C17∶0, C18∶0 and C23 ∶ 0 were higher in SFA, C18 ∶ 1n9c, C16 ∶ 1n7, C20 ∶ 1n9 and C22 ∶ 1n9 were higher in MUFA, and C18∶2n6, EPA and C22∶6ns were higher in PUFA.In free fatty acids, the contents of C17∶0, C15∶0, C18∶0, C22∶1n9, C18∶1n9c, C18∶2n6c, C20∶5n3 and C22∶6ns were higher.Moreover, through the cluster analysis, the compositions of total and free fatty acids of crab meat were similar.The compositions of total fatty acids of crab spawn and paste were similar, but the free fatty acids compositions were different.
