Abstract:
The paper explored a simple, rapid and accurate method for the determination of ascorbic acid (VC) in Maillard reaction from VC-Cys model system. UV spectrophotometry and HPLC methods were compared using the metaphosphoric acid as the suitable extraction solution. The results showed that both UV spectrophotometry and HPLC methods had good linear correlations, over the measurement range of 0
14μg/mL and 0
100μg/mL respectively, with R reached 0.999 in both cases. The average recoveries were 111% and 99.7% respectively. The results of two methods determining 3 parallel samples were close. The error was allowed. By contrast, the UV spectrophotometry was much more simple and rapid, so it was more suitable for the determination of VCin Maillard system.
