Study on sterilization bacterium effect of pulsed light on fresh-milk

摘要: 采用响应面法优化脉冲强光对鲜牛奶细菌杀灭工艺条件,以闪照频率、闪照能量、闪照距离和样液厚度为影响因子,以灭菌率作为响应值,采用响应面法优化脉冲强光对鲜牛奶细菌杀灭工艺条件。结果表明,闪照频率29Hz、闪照距离12.8cm、闪照能量300J、样液厚度2mm时能达到最佳的灭菌效果,在此条件下的细菌灭菌率达到99.996%,闪照能量对鲜牛奶细菌杀菌效果的影响最大。Abstract: Response surface methodology ( RSM) was used for optimizing the technological conditions of bacterial sterilization on fresh milk treated by pulsed light. In this paper, flash frequency, flash distance, flash energy and thickness of liquid were selected as influencing factors and sterilization rate was selected as response value.The results indicated that 29Hz flash frequency, 12.8cm flash distance, 300J flash energy and 2mm thickness of liquid sample of pulsed light had the best sterilization efficacy. Under this condition, the sterilization rate could reach 99.996%, flash have a maximum impact on sterilization bacterium effect of fresh milk.
