Research progress in multi-element composition and stable-isotope ratio in tracing origin of honey

摘要: 随着生活水平的提高,消费者在关心蜂蜜掺假与否的同时,更加关心其植物和地理来源等真实性信息,各国科研人员纷纷开展了蜂蜜溯源研究。本文综述了自2000年以后多元素组成和稳定同位素比值在蜂蜜溯源相关研究中的应用,重点介绍了原子吸收光谱、电感耦合等离子体发射光谱和电感耦合等离子体质谱测定蜂蜜中元素含量以及稳定同位素质谱测定碳、氮、氢和硫等元素稳定同位素比值在蜂蜜溯源研究中的应用进展,并对多元素组成和稳定同位素比值在蜂蜜溯源研究中的发展方向进行了展望。Abstract: With the development of living standards, consumers care more about the botanical and geographical origin of honey than adulteration. More and more researchers implemented the study of honey tracing. The application of multi-element composition and stable-isotope ratio used to trace the origin of honey from 2000to 2012 had been surveyed in this review. The application of atomic absorption spectrometry, inductively coupled plasma atomic emission spectrometer and inductively coupled plasma mass spectrometry in determining the contents of multi-elements and the isotope ratio mass spectrometry in determining the stable isotope ratio of carbon, nitrogen, hydrogen and sulphur for tracing the botanical and geographical origin of honey were introduced in detail. The prospect of multi-element composition and stable-isotope ratio that used to trace the origin of honey was also discussed.
