Abstract:
A huge number of studies have demonstrated that the Lactic Acid Bacteria ( LAB) may have the potential to alleviate oxidative stress induced by different factors. In this study, a novel peroxide stress model in vitro was developed to screen the specific LAB strains resistant to the oxidative stress in vitro.Antioxidant effect of isolated LAB strains was evaluated by in vitro indicators including potassium ferricyanide reduction activity, lipid peroxidation, DPPH free radical and hydroxyl free radical scavenging action, Fe2+ and Cu2+ chelating properties. The reducing activities of two isolates CCFM8661 and CCFM1566 reached ( 226.47 ± 4.68) , ( 212.35 ± 6.45) μmol /L cysteine equivalent, respectively.In the liposome system, the IC50 value of lipid peroxidation reached 8.1, 9.3 Log10 CFU /mL.Scavenging action level of DPPH and hydroxyl free radical of these two strains were more than 60% and both of these two strains possessed superior chelating ability to Fe2+ and Cu2+ .These two bacteria were identified to be Lactobacillus plantarum CCFM8661 and L.casei CCFM1566.
