摘要: 通过添加营养液促进糙米发芽过程富集GABA,并采用响应面方法确定了其最佳培养条件:发芽温度30.7℃、发芽时间24.8h、营养液pH5.68和MSG浓度2.09mg/mL,此条件下发芽糙米中GABA含量可达到210.8mg/100g。Abstract: The enrichment of GABA during brown rice germination process was promoted by using nutrient water culture method. Meanwhile, the technological conditions were optimized by using response surface methodology (RSM) :the germination temperature was 30.7℃, the germination time was 24.8h, nutrient solution pH was 5.68 and MSG concentration was 2.09mg/mL. Under optimum conditions, the GABA content in germinated brown rice can be reached to 210.8mg/100g.
