Abstract:
In this study, a new functional porridge was prepared on the basis of a low sugar eight treasure porridge with supplementary of phytosterol esters, red yeast rice (effective ingredients: lovastatin), dietary fiber (inulin), zero calorie sugar and other functional materials. Then, the production process was studied systematically, focusing on the key process and parameter design. Through single-factor experiments, the mixing time of rice and bean material was 20~30 s, the canned quantity was 52~58 g, the best filling temperature was 65~75 ℃, the sterilization parameter was 121 ℃/40 min, and the rotation speed was 2.5 r/min. The stability test showed that all physical, chemical and microbiological indicators were in line with GB/T 31116-2014 eight treasure congee canned standard during the three-month heat preservation at 37 ℃, the retention rates of the functional ingredients lovastatin and phytosterol esters were both above 90%. Volunteers' self-controlled experiment was adopted, and each person consumed 1 can of health porridge (360 grams) daily for 45 days. The results of human experiments showed that the porridge could significantly reduce triglyceride (TG), total cholesterol (TC), and low-density lipoprotein cholesterol(LDL-C). However, no significant effect of the porridge on high density lipoprotein cholesterol (HDL-C) was found. In summary, this study laid a solid theoretical foundation for the industrialization of the health-care porridge.
