食品颜色评价及在食品工业中的应用

Food Color Evaluation and Application in Food Industry

  • 摘要: 食品颜色是食品品质的重要评价指标之一,对于食品的商品价值有重要影响。食品颜色能够表征食品的品质特性、指示成熟阶段和加工及贮藏过程中出现的问题,也会影响消费者的选择,因此对于食品颜色的检测意义重大。食品颜色可以实现无损检测和自动化检测,符合未来检测技术的发展方向。因此本文对国内外相关研究进行综述,分析了食品颜色感知情况,介绍了颜色表示系统,同时列举色差仪与计算机视觉技术的应用情况,并分析其优缺点。最后,对于食品颜色相关检测的发展进行预测与展望,以期为食品检测技术的发展提供理论支持。

     

    Abstract: Food color is one of the important evaluation indicators of food quality and has an important influence on the commodity value of food. Food color can characterize the quality characteristics of food, indicate the maturity stage and problems that occur during processing and storage, and will also affect consumers' choices. Therefore, the detection of food color is of great significance. Food color can achieve non-destructive testing and automated testing, which is in line with the development direction of future testing technology. Therefore, here is a review of relevant domestic and foreign research,which analyzes the perception of food color, and introduces the color representation system. At the same time, the review summarizes the application of colorimeter and computer vision technology, and analyzes their advantages and disadvantages. Finally, this paper makes predictions and prospects of food color detection to provide theoretical support for the development of food detecting technology.
