Abstract:
With the new generation of toxicity test method technology feasible in different fields, its application in food safety risk assessment further improves the accuracy of exposure assessment. The key correction factors introduced in the process of food assessment, such as bioaccessibility and bioavailability of contaminants, can provide more precise essential data for food safety management, including food safety control and food safety standard establishment and revision. Accordingly, this paper reviews and compares various
in vitro alternative models and their applications for bioaccessibility and bioavailability in food risk assessment of chemical contaminants, and presents an outlook on the future of new methods and technologies, to provide a methodological reference for accurate assessment of the exposure of chemical contaminants via dietary.
