Abstract:
Six different varieties of blueberry fruits(Elliott,Patriot,Northblue,Northland,Duke,Bluecrop)extracted anthocyanins with aqueous methanol solution as experimental materials. High performance liquid chromatography-electric spray four pole flight time series multipolar mass spectrometer(HPLC-DAD-ESI/IT-TOF/MS
n),UV-visible spectroscopy and multi-stage mass spectrometry data were used to identify and compare the blueberry anthocyanin structures of six different varieties. The results showed that 13 anthocyanin compounds were identified in the six kinds of blueberry fruits. The aglycones were mallow pigment,delphinidin,cyanidin,morning glory pigment,and peony. Among them,11 kinds of anthocyanins,Patriots 10 species,northern blue 7 species,Hokuriku 12 species,Duke 9 species,Lanfeng 6 species were detected in Elliot Blueberry.Mallow pigment-3-O-galactose with glycosylation,delphinidin and cyanidin without glycosides could be detected in 6 kinds of blueberry fruits through the structural analysis of anthocyanins. There were significant differences in the types,numbers and structures of anthocyanins contained in different blueberry varieties. This paper would provide a theoretical support for the rapid acquisition of structural information of anthocyanins in blueberries.
