Abstract:
Using passion fruits as raw material,the effects of different concentrations of konjac glucomannan(Konjac Glucomannan,KGM)(0.5%,1% and 1.5%)on postharvest quality of passion fruits at room temperature were studied. The results showed that,KGM coating treatment reduced the evaporation of water in passion fruits and displayed lower shrinkage index and the weight loss rate,maintained higher epicarp

a*,
b* value,which made passion fruits have a better color during storage at room temperature. At the same time,KGM coating treatment inhibited the degradation of soluble sugar,titrated acid and soluble solid(TSS),and maintained the flavor and nutritional quality of passion fruit. Among different concentrations of KGM,1.0% KGM coating treatment revealed the best quality and storability of passion fruits,which could be a novel approach for increasing quality and extending the shelf-life of postharvest passion fruits.
