Research Progress on Speciation Analysis of Arsenic in Food by HPLC-ICP-MS

  • 摘要: 砷以多种形态在自然界中广泛存在,其毒性也因形态存在差异,暴露于食品中会对人体健康造成威胁,因此分析食品中砷的形态尤为重要。高效液相色谱串联电感耦合等离子质谱(HPLC-ICP-MS)是当前元素形态分析中常用的方法之一,具有灵敏度高和选择性强等优点。本文详细总结了近些年国内外高效液相色谱串联电感耦合等离子质谱技术在不同食品中砷形态上的应用,以期为日后食品中的砷化合物提供借鉴。

     

    Abstract: Arsenic exists widely in nature in various forms,and its toxicity varies from form to form. To avoid pose a threat to human health by exposuring to food,it is particularly important to analyze the forms of arsenic in food. High performance liquid chromatography series inductively coupled plasma mass spectrometry(HPLC-ICP-MS)is one of the more accurate methods commonly used in current elemental speciation analysis with the advantages of high sensitivity and selectivity. Application of HPLC-ICP-MS in the analysis of arsenic speciation in foods in recent years were summarized in detail to provide reference for the analysis of arsenic species in foods in the future.
