克氏原螯虾壳高值化利用的研究进展
Research Progress on High Value-added Utilization of Procambarus Clarkii Shells

摘要: 近年来,我国餐饮业每年都要消耗几十万吨克氏原螯虾,但克氏原螯虾的可食用部分占总体很少,大部分克氏原螯虾经工业加工处理或烹饪食用之后,剩余的虾壳都被直接丢弃,浪费资源也污染环境。克氏原螯虾虾壳含有多种营养物质,通过一定的开发可以变废为宝,实现克氏原螯虾的经济效益最大化,同时减少其对环境的污染。目前克氏原螯虾虾壳常被用来提取甲壳素、蛋白或制成动物饲料等,本文对克氏原螯虾虾壳开发利用的研究进展展开了综述,总结克氏原螯虾虾壳开发利用过程中存在的问题,并指出我国克氏原螯虾壳工业化生产的开发方向。Abstract: Recently,tens of tons procambarus clarkiis are consumed in Chinese catering every year. However,only small part of procambarus clarkiis is edible,and large amounts of procambarus clarkiis’ shells are discarded directly after the individual consumption,wasting resources and polluting the environment. The appropriate processes convert the shell of procambarus clarkiis profitable since it contains varieties of nutriments,but also it maximizes the economic benefits of the procambarus clarkiis and reduces environmental pollution. At present,the shell of procambarus clarkiis are used for extracting the chitin and animal feed. In this review,the research on the development and utilization of the procambarus clarkiis shells is reviewed,and the problems in the development and utilization of shrimp shells are summarized,the development direction of industrial production of shrimp shells in China was pointed out.
