Abstract:
In this study,the basic nutritional contents,amino acid and fatty acid compositions of rape bee pollen and rape bee bread were studied to assessment their nutritional value. Results indicated that the contents of water content,reducing sugars and crude fat of rape bee bread were significantly higher than that of rape bee pollen(
p<0.05),while the content of ash,proteins and flavonoids were significantly lower than that of rape bee pollen(
p<0.05). The 8 essential amino acids were present in rape bee pollen and rape bee bread. The ratio of total essential amino acids to total amino acids(EEA/TAA)in bee bread was significant higher than that in pollen,which was 37.80% and 34.74%,respectively. Palmitic acid levels were found to be the highest of the saturated fatty acid in rape bee pollen and rape bee bread,which was 33.81% and 33.50%,respectively. The highest content of unsaturated fatty acids was linolenic acid in rape bee pollen and rape bee bread,which was 33.42% and 38.22%,respectively with significant difference(
p<0.05). Therefore,rape bee bread with higher nutritional value,which was a rich source of both high quality essential amino acids and linolenic acid,can be used to the development of functional foods.
