无机砷污染稻米的去毒研究进展

Research Progress of Rice Detoxification on Inorganic Arsenic Contamination

  • 摘要: 无机砷具有较高的毒性,对人体健康有很多严重的危害,如导致心血管疾病、癌症等。由于水稻比其他谷类作物更容易累积更多的砷,因此降低米中无机砷的含量从而降低人们通过食用大米而摄入无机砷的风险,对人们的身体健康至关重要。本文主要总结探讨了国外从水稻到熟米不同阶段有利于去除无机砷污染的不同方法和技术。而国内相关的研究很少,因此,方便且更适于中国居民膳食习惯的去除中国大米中无机砷的方法和技术需要进一步地研究和开发。

     

    Abstract: Inorganic arsenic, which is highly toxic, has many adverse effects on human health such as cardiovascular disease, cancers and so on. It is easier for arsenic to accumulate in rice compared to other grains, therefore reduction of inorganic arsenic in rice in order to lower the risks of arsenic exposure from rice consumption plays a significant role in human health. In this study, different methods and techniques for different processes from paddy rice to cooked rice abroad in favour of inorganic arsenic reduction in rice were discussed and reviewed. However, there was lack of relative researches in China. Therefore, convenient methods and techniques for inorganic arsenic removal in different types of Chinese rice need to be developed with more suitability of Chinese dietary habits.
