In order to explore the application of intense pulsed light treatment in edible fungi processing, the effects of different intense pulsed light energy and sample treatment methods on vitamin D
2content of
Lentinus edodes were studied. The results showed that comparing with the ultraviolet radiation, the transformation rate of ergosterol to vitamin D
2 was greatly improved by intense pulsed light treatment. Slicing could greatly improve the conversion rate of ergosterol. Comparatively, the drying method had less influence on vitamin D
2 content in fresh
Lentinus edodes treated by pulsed light. In addition, intense pulsed light and UV treatment did not increase the content of formaldehyde in
Lentinus edodes. It had little influence on its main nutrients, the content of total sugar, reducing sugar and vitamin C increased slightly. The results indicated that compared with the ultraviolet treatment, intense pulsed light treatment was a more efficient way to improve vitamin D
2 content of edible fungi. It had a good application prospect in increasing the nutritional quality of edible fungi.
