Abstract:
Two compounds, geosmin and 2-methylisoborneol, cause meat from aquatic products to have an off-flavor.Studies on detection technologies for geosmin and 2-methylisoborneol in aquatic products are important.Because they enable us to remove these two compounds from aquatic food products. This review presents both compounds 'physical and chemical properties, safety, and mechanisms of production in detail.Determination methods for geosmin and 2-methylisoborneol in aquatic products were summarized and critically reviewed with regard to their application and improvement in the future as well. Sensory measurements are often used for qualitative testing and auxiliary verification. GC-MS is a critical method for qualitative detection of geosmin and 2-methylisoborneol in aquatic products.However, all aspects of detection using GC-MS need qualified staffs, and test parameters should be adjusted according to different samples.The use of electronic nose and tongue for sensory detection of geosmin and 2-methylisoborneol is rare, but artificial intelligence products, such as electronic nose and tongue can effectively replace traditional sensory determination methods.In view of available techniques and their benefits, we propose the combination of electronic nose and tongue, electrochemical methods, PCA, ANN, and other mathematical models to obtain accurate scientific data.
