花椒果皮与种子营养类化学成分分析与资源价值评价

Nutritional component analysis and resourceful value evaluation of the pericarp and seed of Zanthoxylum bungeanum

  • 摘要: 本研究基于中药资源化学的研究理念,以发现及创新花椒资源价值、构建多途径利用产业链为目的,分别采用硫酸-苯酚比色法、液相色谱法、凯氏定氮法、液相色谱-质谱联用法等对花椒果实及种子中可溶性多糖类、单糖及寡糖类、蛋白质及氨基酸类、核苷类等营养类物质进行了分析。结果显示,花椒果皮富含可溶性多糖类(96.33 mg/g)及蛋白质类(92.32 mg/g)营养物质,且其蛋白氨基酸组成比例与人体必需氨基酸较为接近,营养价值较高。花椒种子中糖类、蛋白质及氨基酸类营养物质含量相对较低,但核苷类营养物质含量相对较为丰富(3.94 mg/g)。在此基础上,基于花椒果实营养类物质组成及分布,提出了花椒果实精细化利用策略。本研究阐明了花椒果实中各类型营养成分的分布、组成及含量,为促进我国花椒资源产业的提质增效和健康发展提供了支撑。 

     

    Abstract: Based on the concept of resourceful chemistry of Chinese medicinal materials, the nutritional components, such as polysaccharides, monosaccharides and oligosaccharides, proteins and amino acids, nucleosides in the pericarp and seed of Z.bungeanum were analyzed by sulfuric acid-phenol colorimetry, liquid chromatography, Kjeldahl and liquid chromatography-mass spectrometry methods to discover their potential values.The results showed that the pericarp of Z. bungeanum was rich in soluble polysaccharide ( 96.33 mg/g) and proteins ( 92.32 mg/g) nutrients, and the protein amino acid.The proportion of protein amino acid composition was close to that of human body with high nutritional value.The contents of soluble polysaccharide and proteins were relatively low, while the content of nucleosides was relatively high ( 3.94 mg/g) . Based on the composition and distribution of nutrient substance contained in the fruits of Z.bungeanum, fine utilization strategy was proposed for extending the industry chain of Z.bungeanum resources and reducing the waste in the deep processing of Z.bungeanum resources.This study clarified the distribution, composition and content of nutrient components in the fruit of Z. bungeanum, which could provide support for the healthy development of Z.bungeanum resource industry.
