静电层层自组装技术及其在脂溶性功能因子中的应用研究进展

Research progress of electrostatic layer-by-layer self-assembly technology and application in lipophilic functional component

  • 摘要: 脂溶性功能因子的包埋、释放及稳定性研究一直受到广泛的关注,利用层层自组装技术将聚合物电解质沉积在带电油滴表面形成多层乳液可提高其贮藏稳定性和消化吸收率。本文综述了层层自组装技术及制备多层乳液所需电解质种类,介绍了多层乳液在脂溶性功能因子中的应用及其结构表征,并提出了目前需重视的问题及未来发展趋势。 

     

    Abstract: Studies on encapsulation, release and stability of lipophilic functional component have been paid much attention.Multilayer emulsions, which are formed through polyelectrolytes' being deposited onto the surfaces of charged oil droplets using layer-by-layer self-assembly technology, increase the storage stability and digestibility of lipophilic functional component. In this paper, the layer-by-layer self-assembly technology and kinds of polyelectrolyte required for preparation of multilayer emulsion were introduced, the applications and structural characterization of multilayer emulsions in lipophilic functional component were illustrated. In addition, problems and future development trends related with multilayer emulsions were summarized.
